Of course <strong>classic muffin ingredients<\/strong>mix flour, sugar, baking soda, salt, eggs, vegetable oil, and vanilla extract.<\/p>\n<p>Our modern twist keeps many of the good things, but changes some classic ingredients to make them vegan, gluten-free, naturally delicious, and <em>I mean<\/em> more healthy. Let us show you how it&#8217;s done!<\/p>\n<h2 class=\"wp-block-heading\" id=\"h-how-to-make-vegan-gluten-free-morning-glory-muffins\">How to Make Vegan Gluten-Free Morning Glory Muffins<\/h2>\n<p>Our version of this <strong>1-container<\/strong>fruit and vegetable filled muffins are made with the following ingredients:<\/p>\n<ul class=\"wp-block-list\">\n<li><strong>Flaxseed meal + orange juice<\/strong> &#8211; this combination creates a &#8220;flax egg&#8221; that keeps these vegan\/eggs and adds a natural sweetness and subtle orange flavor!<\/li>\n<li><strong>Coconut sugar<\/strong> &#8211; a low glycemic sweetener with a slightly caramelized taste. Brown sugar or cane can also work!<\/li>\n<li><strong>Avocado oil + non-dairy milk<\/strong> &#8211; our version is lower in oil than the old one, which is where the non-dairy milk comes in to thin the dough. Avocado oil is our favorite neutral oil, but you can use other oils, or melted vegan butter.<\/li>\n<li><strong>Oat flour + potato starch<\/strong> &#8211; this gluten-free combination provides the perfect balance of goodness while adding lightness to prevent the muffins from being <em>again <\/em>thick and moist.<\/li>\n<li><strong>A classic of morning glory<\/strong> \u2013 grated apple and carrot, shredded coconut, raisins, walnuts, cinnamon, vanilla extract, salt and baking soda.<\/li>\n<li><strong>Baking powder<\/strong> &#8211; Gluten-free baked goods tend to be dense and gummy than those made with all-purpose flour, so we add baking powder to give it a little extra lift!<\/li>\n<\/ul>\n<p>To make your muffins, combine the orange juice and flaxseed meal and let the mixture rest for a few minutes to thicken.<\/p>\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"1456\" height=\"2184\" src=\"https:\/\/minimalistbaker.com\/vegan-gluten-free-morning-glory-muffins\/?tp_image_id=118898\" data-pin-description=\"Vegan + gluten-free morning glory muffins packed with apples, carrots, raisins, coconut, and walnuts! Whisk until well combined. <\/span><\/p>\n<\/li>\n<li id=\"wprm-recipe-134548-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\">\n<p><span style=\"display: block;\">Add the oat flour, potato starch, cinnamon, ginger, baking soda, baking powder, and salt. Blend until smooth with no lumps remaining. They will be full!
